Layered Pea Salad

1 head iceberg lettuce, chopped or torn
6 eggs, boiled and sliced
1 lb bacon, cooked and crumbled
1 red onion, diced
1 bag frozen peas
1 bag colby jack cheese
1 1/2 cups mayonaiseer
Place Lettuce in clear glass bowl (this looks the nicest), spread mayo over lettuce, top with cheese, onion, bacon and eggs, top with peas. Sprinkle with pepper and paprika.  Give enough time for peas to thaw before serving.

People Puppy Chow

1 box favorite Chex cereal
1 cube butter
1 cup creamy peanut butter
12 oz bag chocolate chips
1 box powdered sugar

Melt butter, chocolate and peanut butter. In large bowl pour melted mixture over Chex, stir until covered. Place Chex mix in large plastic bag (I use the kind from the grocery store) sprinkle entire box of powdered sugar over Chex, twist top of bag and shake until cereal is covered with sugar and pieces have separated.
This is a huge favorite of the kids.

Granola Clusters

2 1/2 cups oats
2/3 cup flour
1/2 cup brown sugar
1 tsp salt
1/2 cup favorite nuts, chopped
1/2 cup sunflower seeds
Place in bowl and stir
1/2 cup butter
1/2 cup maple syrup
Melt in microwave until butter is completely melted, stir
Slowly pour butter mixture over dry mixture until all is covered, spread on baking sheet and
bake in a 325 degree oven for 10 minutes, turn granola over and place back in oven for another 10 minutes.
Remove from oven and place in bowl, add dried fruit of choice and any other things that you wish. We like it with Raisins and M&Ms.  Do not over cook, it will seem too moist when you take it out of the oven but it will harden up when it cools.

Jalapeno Bacon Bites

12 fresh jalapeno peppers
12 oz cream cheese
bacon strips

Cut peppers long ways and remove seeds and membrain (wear plastic gloves)
with a spoon fill peppers with cream cheese and wrap with a strip of bacon.
Bake in a 325 oven until bacon is done and crisp.  Enjoy!!
These are a great appitizer for people on the Atkins or any low carb diet.
